You need to invest not only money, but also your soul

My husband went to the market to buy meat, onions, flour, and eggs. We all know that wholesale is cheaper. When purchasing, we always asked to see certificates and documents for the goods, which is very important in our case. Then they gave us discounts as regular customers.

In the first month, we spent 86,000 rubles on raw materials for dumplings. Taking into account the fact that all the products are of high quality, we relied on the taste, with a lot of meat filling and soft, unobtrusive dough.

First month of work

The husband actively participated not only in purchasing, he cleaned the meat as needed, cut it, and helped sculpt it. It took me 8 hours a day to sculpt 10 kg, my husband could help for an hour or two, sculpt, and in the first month it turned out to be 320 kg. Only 120 kg were sold to my husband’s colleagues, but advertising on the Internet bore fruit. The remaining dumplings were bought up by nearby areas, they took from 2 kg to 4 kg per person, and only one was surprised, he bought 20 kg at once.

Income in the first month amounted to 122,480 rubles. We had 8,900 rubles in the red. It’s very good for the first month, considering that we weren’t killing ourselves all day long, but making dumplings for me is no longer such a meditation.

The two of us could put on 20 kg on Saturday and free up the day for family fun. It’s hard to sculpt by hand, the back hurts a lot and gets tired, but from polling friends and acquaintances, they understood that this form is preferable.

Although I was interested in various electronic dumpling makers, the one that would suit me in size and other characteristics sculpted 12 kg in an hour, and I sculpt these 12 kg almost all day. But there is a huge drawback in such devices - you need to put dry minced meat there; if it is wet, there is a risk that it will not stick together well, but to find out, I had to buy it.

Experiment with color

I decided that I would compensate for the shape with color. I had a juicer (this saves money), I took carrots, beets and any greens that are currently cheaper and made juice. I immediately made half a liter of each juice, sometimes a liter, it is stored well and for a long time in the refrigerator, why not make it with a reserve, especially since washing the juicer is a rather dubious pleasure.

I decided that I would compensate for the shape of the dumplings with color.

Now the dumplings are also beautiful:

  • carrot juice gives a beautiful orange color (I tried adding turmeric to the dough to give it a rich orange color, the seasoning is not cheap and you need a lot for the desired color);
  • beet juice is very active and even a small amount gives a pink color, sometimes I replace it with red cabbage, but it happens that it gives spiciness to the dough and, in this case, you should not pepper the minced meat or pour a little juice for a pale pink color;
  • juice from greens, it doesn’t have to be fresh, even if the leaves darken a little and become sad, they can still be used, but yellow or rotting ones under no circumstances!!! You need a lot of greens for 500 g of juice; this bright green color costs a little more.

It will take a little more time, but by raising the price and increasing the interested public with beautiful dumplings, we get more.

Main quality

Many people want to spend little time and money and get a good profit, this can be done, but it will be either a one-time profit or a very unstable one.

I know that you can save on flour and use not the highest grade, gray and almost lost, a bag - for nothing. You can add cabbage, potatoes, bread, a lot of onions or crushed ice to the minced meat, but will it be tasty? And minced meat can be filled with spices, not meat, but soybeans and waste, but will your conscience allow it? Moreover, many busy parents give this to their children. Having tried these dumplings, at a price higher than ready-made ones from the supermarket, you can again return to store-bought ones.

When I make dumplings, I always try a few from different batches, with different fillings, and feed them to my family; I pay close attention to the taste and quality.

First tangible net profit

At the beginning of the second month, there was an uncovered investment of 8,900 rubles, plus the cost of raw materials in the amount of 95,000 rubles (more than in the previous month due to the purchase of spinach, salmon and cheese), plus the purchase of a machine for making dumplings - 2,500 rubles. I spent about 5,000 rubles experimenting with the machine, the minced meat was wet and all the products turned out to be substandard.

The income for the second month was 130,000 rubles, and the net profit was 18,600 rubles, that is, a plus from the second month - this is great.

A man who purchased 20 kg in the first month later bought 60 kg. He turned out to be the owner of a diner; his assortment was just short of dumplings. This client was pleased not only with large purchases, but also with the fact that it was not so important to him what shape the dumplings were. I freed up a lot of time, because for the cafe I prepared dumplings using a machine, and for juiciness I added ice to the minced meat, not instead of the minced meat, but to it. This trick allows the dumplings to form quickly and remain juicy during cooking.

Difficulties of the dumpling business

The first difficulty was in the calculations. Prices for meat vary; each type must be clearly calculated both in order to have an idea of ​​the costs and in order to set the price correctly.

Product price calculation

The cost of dumplings is from 240 rubles. and up to 360 rub. per kg, depending on the filling:

  • the cheapest - with pork,
  • with chicken and pork-beef (assorted) - a little more expensive,
  • just beef (really good, not old) - quite expensive,
  • from salmon - the most expensive.

Sometimes, instead of chicken, I take turkey, but only instead. Two such positions at the same time are not very profitable, although it is a dietary option. During the first six months, dumplings with pork were sold for 360 rubles. kg, the rest are more expensive.

The most expensive ones, with salmon, spinach, cheese, cost 540 rubles. per kg, but such orders are rare. Therefore, another difficulty is to predict what will be in demand. You can’t stick it on in advance, it’s better to order it.

Payment for orders

It is planned that the dumpling shop will provide the following types of services:

1) preparing dumplings and other assortments;

2) sales of frozen dumplings of our own production by weight;

3) delivery of finished products.

Production is carried out in-house using only natural, high-quality ingredients. The dumplings' products are positioned as "home cooking", so the use of semi-finished products and flavoring additives is excluded. The dumpling assortment is divided into two groups - variations of the single product (dumplings) and by-products (salads, first courses, drinks, desserts). A mono-product has maximum added value, and by-products are designed to stimulate sales of the mono-product.

Approximate menu includes:

1) Dumplings with various fillings: beef + pork; chicken; salmon fillets; with chicken liver; shrimps; cheese and herbs.

5) Supply organization. Before opening a dumpling shop, you should establish supply channels for raw materials and decide on suppliers. For consumers, products that use natural products from farms will be more attractive. In this case, it is necessary that all ingredients used comply with GOST requirements. Chicken egg supplier;

Meat and poultry supplier;

Supplier of fish and seafood;

Supplier of fresh vegetables, herbs, fruits;

Beverage suppliers.

To simplify financial calculations, variable costs are calculated based on the amount of the average bill and a fixed trade margin of 300%.

Fixed expenses consist of rent, utilities, payroll, advertising costs, taxes and depreciation. The amount of depreciation charges is determined by the linear method, based on the useful life of fixed assets of 5 years. Fixed costs also include tax deductions, which are not presented in this table, since their amount is not fixed, but depends on the volume of revenue.

Thus, fixed monthly expenses were determined in the amount of 431,550 rubles. The planned revenue is 3,296,768 rubles per month.

8. EVALUATION OF EFFECTIVENESS

The payback period for the project with an initial investment of 1,635,000 rubles is 6-7 months. The net monthly profit of the project when reaching planned sales volumes will be 1,504,747 rubles. It is planned to reach the planned sales volume at the end of the first year of operation. The profitability of sales in the first year of operation of the dumpling shop will be 37%.

The net present value is positive and equal to 1,691,289 rubles, which allows us to talk about the investment attractiveness of the project. The return on investment ratio is 34.15%, the internal rate of return exceeds the discount rate and is equal to 27.23%, and the profitability index is 1.03.

9. POSSIBLE RISKS

To assess the risk component of the project, it is necessary to analyze external and internal factors. External factors include threats related to the economic situation in the country and sales markets. Internal – the effectiveness of organization management.

The specifics of the establishment determine the following external risks:

Increased prices for raw materials, unscrupulous suppliers. In the first case, there is a risk of increased costs and, as a consequence, the selling price, which may negatively affect demand. In the second case, the risk is associated with interruptions in production. It is possible to reduce the likelihood of these threats by choosing suppliers wisely and including in the contract all the necessary conditions that provide for financial liability of the supplier in case of their violation;

Competitors' reaction. Since the food service market is quite saturated and competitive, the behavior of competitors can have a strong impact. To minimize it, it is necessary to form your own customer base, constantly monitor the market, and have a customer loyalty program;

Refusal to provide rental premises or increase in rent. To reduce this risk, you must enter into a long-term lease and choose your landlord carefully. You should also consider purchasing real estate for business.

Internal risks include:

Failure to achieve the planned sales volume. This risk can be reduced with an effective advertising campaign and a competent marketing policy, which includes various promotions and bonuses;

Equipment breakdown and production downtime. Regular maintenance of equipment in order to maintain its performance will help mitigate the risk;

Problems with personnel, which mean low qualifications, staff turnover, lack of motivation of employees. The easiest way to reduce this risk is at the recruitment stage by hiring employees who meet all the requirements. We should also not forget about staff motivation – psychological and monetary.
