How to open a dumpling shop? We draw up a business plan. How to start a dumpling business at home Open a dumpling business

The market segment for frozen semi-finished products, in particular dumplings, is very promising. According to statistics, the demand for frozen food has increased in recent years. The reason for this is people’s busyness and the search for a budget-friendly substitute for meat. If you are determined to start a similar business, then you need to write a business plan.

You can purchase a ready-made document, but it is quite possible to develop it yourself. To do this, you need to study the points that will be outlined below - they are the basis of the future project.

Market and competition analysis

Pelmeni are an integral part of Russian culture, which makes them a sought-after product. At the same time, the demand for this product is stable and does not have sharp seasonal fluctuations. But competition in the market is high: There are 5 competitors per 10 thousand consumers famous brands.

Carefully research the work of your competitors, their range, pricing and points of sale. This will provide a lot of useful information, because in order to “break through” in the market, you need to offer the buyer something more attractive. The client wants to receive good quality products at an affordable price, constantly tasting new attractive options.

Production plan

The key link in drawing up a business plan is a description of direct production, from which calculations will be based in the future.

Room

Regardless of the technology chosen for the manufacture of products, the premises must comply with sanitary standards. It is best to consult specific services, as their conditions may differ from those that can be found on the Internet.

We are talking about the food industry, where the following minimum requirements for the premises exist:

  • availability of water, light and heating;
  • ventilation;
  • walls lined with tiles.

The optimal location for such premises is the suburbs, where cheap labor is available and there are many options for locating a workshop at reasonable prices. Area may vary from 10 to 100 squares, but on average, the ideal figure is 60 m2. It is important to consider the presence of a toilet for staff.

Equipment

Modeling dumplings can be done using two technologies:

  • Manually— at the initial stage, this option requires less investment, but the productivity of such modeling is low.
  • Machine sculpting– a more expensive method that requires the purchase of special equipment. However, it quickly pays for itself due to the large volume of output.

Automation of production helps to organize the process with the involvement of a minimum number of personnel, which reduces labor costs and associated taxes. The machine line requires the purchase of the following equipment:

  • Dough forming kit:
    • flour sifting machine;
    • dough kneader;
    • sheeting machine.
  • Industrial meat grinder and mince mixer.
  • Automatic machine for forming dumplings.
  • Chambers for storing raw materials and freezing products.
  • Packaging line.

The center of attention is the molding machine, which produces dumplings ready for freezing. The productivity of such machines can vary from 50 to 270 kg/hour depending on the selected class. The choice of equipment on the market is very wide, but domestic and Chinese models are especially worthy of attention - they have good reviews and a reasonable price.

Raw materials

A dumpling is a small lump of minced meat wrapped in dough. The main components for its production:

  • Flour with 30% gluten content.
  • Meat: pork, beef and chicken.
  • Lard.
  • Powdered eggs or chicken eggs.
  • Vegetable oil.
  • Drinking water or milk.
  • Bulb onions.
  • Salt, spices and other additives.

The recipe must comply with GOSTs or separately adopted specifications. There is one dough for any type of dumplings, and with the help of variations of minced meat and spices you can create a range of products.

In the following video you can clearly see the manufacturing process:

Financial plan

The financial section, namely the cost and profit estimates, helps to understand the prospects of the project in a clearer light.

Approximate figures for an automated dumpling workshop with 5 workers and a production of 700 kg of products per day:

  • Purchase of equipment – 500 thousand rubles.
  • Marketing costs – 30 thousand rubles.
  • Business registration – 10 thousand rubles.
  • Renovation of the premises - 50 thousand rubles.
  • Monthly rent is 40 thousand rubles.
  • Purchase of raw materials per month – 350 thousand rubles.
  • Salary per month – 80 thousand rubles.
  • Utility costs per month – 10 thousand rubles.
  • Forecast of average monthly income – 550 thousand rubles.
  • Forecast of net profit per month – 70 thousand rubles.

The payback period for this business is expected to be around 8 months., taking into account a three-month period for full production setup.

Organizational plan

Staff

To start any production process you need personnel. When using manual labor, you will need at least 4-5 people without special qualification requirements. Automated lines require at least 2-3 people experienced in working with dumpling equipment. Even when organizing a large workshop with decent turnover, 15 people are enough.

It is very advisable to hire a technologist, especially if the business owner is not familiar with the dumpling business.

We need 3-4 people with experience to control purchases, prepare minced meat and direct production. One of them will be assigned to work on packaging products.

For food production personnel must have health certificates and undergo regular medical examinations. Failure to comply with these requirements may result in severe fines and indefinite closure upon the first inspection or complaint from a consumer.

Transport

It is important to carefully consider the organization of product transportation - a driver with his own transport is best. He can be hired part-time with agreement on the shift schedule.

Business registration

For an official enterprise, registration with the tax authorities is required, which will take at least two weeks. It is also necessary to obtain permission from all necessary authorities in order to work long and fruitfully.

Launch of production

The production of dumplings is a continuous cycle, which includes the following stages:

  1. Purchase of raw materials.
  2. Test preparation.
  3. Preparation of minced meat.
  4. Making dumplings.
  5. Freezing them.
  6. Packing.
  7. Delivery of products to points of sale.

Marketing plan and distribution channels

To launch a product, you need a name; it must be memorable and “appetizing.” The best marketing strategy would be to release products in different price categories: economy class, middle segment, premium class. Thus, all categories of consumers will be captured.

To initially establish sales channels, you need to visit (call) all retail outlets in the city and conclude agreements for the supply of products. Once the production line is established, it will be possible to move on to the region and nearby cities. It is also worth considering wholesale centers that work with semi-finished products.

Risk analysis

Any business venture is associated with certain risks, which are caused by the characteristics of the chosen field of activity, competitors and the general situation in the country. It is necessary to predict potential risks and outline a strategy to combat them. The main risks are failure to meet the planned sales volume, possible equipment breakdowns and downtime, increased prices for raw materials, reaction of competitors, problems with personnel, etc.

Despite the fact that a dumpling shop is a quick-paying enterprise, risk analysis will help you prepare for a quick response to problems that arise. A great idea would be to open a related business, for example. It will bring additional income and help sell excess meat or minced meat during forced downtime.

Dumpling production is a process similar to home cooking, but on a larger scale. The product goes through several stages:

  1. Selection of raw materials (meat, flour, spices, water).
  2. Recipe development - dumplings made from one type of meat or combined minced meat.
  3. Preparing dough that should not be thick, but also not break at the most crucial moment.
  4. The choice of sculpting method is manual or machine.
  5. The production process from minced meat to packaging and sending to the freezer. It can be conveyor or manual.

There's nothing complicated. There is only one point - to make dumplings at home, where the housewife alone controls the process, or in an industrial-scale “kitchen”, where everything must be sterile, molded in accordance with the recipe and the requirements of government authorities. Dumpling production can be organized in the kitchen of your home or you can find a suitable room and equip it with the appropriate equipment and equipment. These are two different areas in which the scale of investment and the number of products produced differ significantly. Accordingly, the opportunities to earn money will be different.

When producing at home, it is impossible to complete the paperwork necessary to transport dumplings to grocery store shelves. Rospotrebnadzor, SES and other authorities issue permits, certificates, certificates only for products manufactured in specially equipped premises. Therefore, you can make dumplings for sale only for friends, relatives or private consumers. But you won’t earn much capital from this.

Opening a dumpling shop, even a small one, provides greater opportunities than making it at home. A small business in the production of dumplings usually starts as a family business and gradually gains momentum. It is irrational to start right away with a large complex, given the scale of competition. It is better to move from small to large, taking into account mistakes and finding attractive recipes for consumers. In addition to dumplings, the production can produce dumplings with various fillings. It won't be a big hassle because the molding principle is the same, but the revenue may be higher due to the variety of choices for customers.

The right start

Where should a beginner start if he is attracted to a business idea for producing dumplings? Any business begins with a deep analysis of the selected market segment and writing a detailed business plan. Without this, you will not be able to understand what investments will be required at the initial stage and whether this direction is profitable in a particular region. If the findings are positive, then the following steps will have to be completed:

  1. Register your entrepreneur status.
  2. Find a premises that meets the requirements for the location of food production.
  3. Collect a package of documents from government agencies that will allow you to open a dumpling shop.
  4. Develop a recipe and decide what list of products will be produced in production.
  5. Select equipment.
  6. Explore potential partners who can provide the workshop with high-quality raw materials.
  7. Resolve the issue of staffing.
  8. Find distribution channels for semi-finished products.
  9. Develop a marketing strategy.

These are the main points in implementing your idea of producing dumplings. Let's look at each stage in more detail.

Organizational aspects

When considering the algorithm of actions for a novice entrepreneur, we will focus on opening a separate dumpling shop, rather than home-made dumplings. You can start either by searching for suitable premises or by registering a business. Although, when submitting documents for registration to the Federal Tax Service, you will have to submit a lease agreement or evidence of ownership of a specific object.

A novice entrepreneur must take care of premises that:

  • Meets the requirements of the SES and fire department.
  • Has access to water supply, electricity, sewerage.
  • Spacious, it is possible to arrange equipment and ensure the safety of raw materials and products.
  • It is desirable that production be located close to a populated area to reduce transportation costs. This is beneficial for expanding the scope of activity if over time it is decided to open your own dumpling cafe.

If the premises are to be rented, then you need to agree with the owner about a long stay, so that during the recovery stage you do not have to curtail production and change the location.

Business registration

For a dumpling shop, two forms of work are relevant: individual entrepreneur (individual entrepreneur), if there is only one owner, and LLC (limited liability company), if several partners will invest in the business. In any case, you need to collect a complete package of documents, pay the state fee and contact the regional tax office. When filling out the application, you must select the type of main and additional activities according to OKVED. The following codes are suitable for the production of dumplings:

  • We choose “Production of food products” as the main type of business activity (code 10).
  • There are two additional options: for dumplings with meat – “Production of meat (meat-containing) semi-finished products” (code 10.13.4), for dumplings with potatoes – “Production of frozen semi-finished potato products” (code 10.31).

At the registration stage, it is necessary to select a taxation system so that the tax office does not automatically make charges according to the general system, which may be unprofitable for a novice entrepreneur. You need to consult with tax authorities, but most often businessmen choose the simplified tax system according to the “income minus expenses” scheme, given that at the first stage there will be a lot of expenses.

Don’t forget to register with the Pension Fund, Social Insurance Fund, and Compulsory Medical Insurance Fund if you plan to hire employees. In production, it is impossible for one owner to do all the work, even with full automation of the workshop.

We collect a package of documents

Business legalization is not the only paperwork step. After receiving the certificate, you will have to go through other authorities to obtain permission to open a dumpling shop. What documents need to be collected:

  • Lease agreement for the selected premises.
  • Certificate of inspection of the premises by firefighters (usually this document is drawn up by the owner of the property).
  • Technical passport for the premises with the latest edition of the redevelopment.
  • Recipe approved by Rospotrebnadzor.
  • Technical conditions.
  • Conclusion of the SES on the condition of the areas where production will be located.
  • Projects of engineering and technological communications (placement of electrical networks, water supply, sewerage, exhaust hoods, fire alarms, panic buttons).
  • Products will require a quality certificate if sales are planned in grocery stores.
  • Permission from the administration and architecture to open a dumpling shop, posting information on the facade of the building.

Documents can be collected gradually. First of all, it is advisable to undergo an inspection of the premises so that the investment will not be in vain if the SES does not issue a permit and it will be impossible to correct the shortcomings. After approval, you can contact design services that will help you arrange the room and properly plan the space.

Production equipment

This stage is the most expensive and stressful, because it is necessary to bring all the rooms into proper condition, select and order equipment, provide conditions for the work of personnel, storage of raw materials and products. Objects in a dumpling shop or warehouse should be placed ergonomically so as not to make unnecessary movements. To complete the production hall, you will need equipment that corresponds to the planned daily production plan.

At this stage, it is advisable to study different equipment proposals, analyze the characteristics and cost. For a novice entrepreneur, in order to save money, there is the option of purchasing used equipment. But this may be a “pig in a poke” if the resource of equipment and devices is coming to an end. Repairs will be expensive and will result in downtime for the dumpling line.

A standard set of equipment for mechanical modeling of dumplings and dumplings may consist of the following items:

  • Dough mixer for kneading dough. Its cost depends on power, bowl volume and hourly productivity. Varies from 50,000 to 300,000 rubles.
  • A flour sifter allows you to remove lumps and small inclusions from the mixture and saturate it with oxygen. The average cost for one set is from 25,000 to 100,000 rubles.
  • Meat grinder for chopping meat. The assortment is large, but it is worth considering production volumes. The cost of an industrial meat grinder is from 50,000 to 500,000 rubles.
  • A mince mixer is used to mix the required ingredients. The better the process, the more homogeneous, rich and tastier the minced meat turns out. Prices range from 70,000 to 500,000 rubles.
  • An automatic complex for making dumplings, into which dough and minced meat are loaded and where programs are configured. The products go through the entire stage from dough rolling to dumpling packaging and labeling. Such a device can cost from 300,000 to 1.5 million rubles.
  • Refrigeration equipment will be required for the warehouse where raw materials and finished products will be stored. A dumpling shop also needs a refrigerator for pre-freezing finished products before the stage of packaging and sending for storage.
  • Do not forget that you will need funds for consumables for equipment, packaging, labels, scales, various containers, and dishes. Staff rooms must be equipped with a wardrobe, bathroom, and shower to ensure employee hygiene.
  • In the administrative building it is necessary to install upholstered furniture, cabinet furniture, and office equipment.

You don't have to spend a lot of money on repairs. It is enough to make simple cosmetic repairs to keep it clean, and think about light sources and hoods.

Recipe development

The market offers a wide range of dumplings with various fillings, so the owner needs to develop his own product recipe in order to be able to attract consumers. Without a ready-made recipe and a list of manufactured products, it will not be possible to obtain approval from Rospotrebnadzor.

Perhaps your mother or grandmother prepared dumplings according to their family recipe and their taste was unforgettable. Then you can take it as a basis. But one type is not enough to reach a large audience of consumers. Tastes and preferences are different, so you can use different types of meat for the filling:

  • Beef.
  • Pork.
  • Veal.
  • Mutton.
  • Bird (various).
  • Game (hare, venison, etc.).
  • Rabbit.

The more varied the choice, the more buyers. You can order a recipe from an experienced technologist if such a position is not provided in the state.

Packaging is also an important detail in selling products; it is worth discussing this issue with the designers if there is no option for selling dumplings and dumplings by weight.

We are staffing

Small-scale dumpling production requires hiring employees. Even a fully automated workshop must be controlled by a person in order to lay down the ingredients, set up the work program, and turn on the conveyor. Small business often involves the participation of family members, but each participant must have an employment contract and have a health certificate in hand. For small production you will need the following services:

  • Equipment operator.
  • Technologist.
  • Butcher.
  • Warehouse Manager.
  • Helper worker.
  • Loader.
  • Cleaning woman.

The owner can handle administrative work and the issue of searching for suppliers and distribution channels, so as not to spend money on an administrator and manager. We hire an accountant part-time, because there will not be a large amount of work at the initial stage. You can do many paperwork yourself. Employees are paid a salary because it makes no sense to determine the salary level based on sales volume.

Selection of raw material suppliers

Making dumplings is not only equipment, but also high-quality raw materials at an affordable price. You need to find suppliers of meat, spices, and vegetables in advance. It is not profitable to buy products at the market or in a store, because the price will be very high, which will affect the final cost of the dumplings. In order to make money and not spoil the impression of buyers, you need a farmer who raises animals for slaughter and has documents confirming the quality of the meat. Without certificates, it will not be possible to sell dumplings through retail chains.

Spices and flour can be bought at wholesale stores, but you should make sure of their quality. The type of flour will greatly affect the external characteristics of semi-finished products and their properties in finished form. First, you need to make a trial purchase and make a small batch of dumplings to see the result. You can deliver raw materials yourself or enter into a delivery agreement with a partner.

We think about product sales in advance

Although dumplings are not a perishable product, it is not profitable to keep a large batch in a warehouse for a long time. Therefore, before launching production at full capacity, you need to find a distribution channel:

  • Small grocery store.
  • Dining room, cafe.
  • Rent a small area and install a chest refrigerator.
  • Go to chain shopping centers.
  • Participate in agricultural fairs and sell dumplings from a tent on wheels.

In any case, you shouldn’t expect great demand right away, because until the consumer tries it, he won’t buy several packages. You can release a trial batch of products and organize a tasting of dumplings so that people can evaluate the quality and leave requests for single deliveries.

Start looking for distribution channels at the stage of preparing production for opening in order to control production volumes and not work at a loss. Investments must pay off; the profitability of dumpling production should not be lower than 25%.

Advantages and disadvantages

Before starting to implement a business idea, it is worth studying the pros and cons of this direction, so as not to curtail production after investing large amounts of money. The disadvantages of the dumpling business include the following:

  • You are unknown to the consumer, and it takes time to get enough customers at once (this is especially true in food production).
  • It is difficult for newcomers to enter large retail chains, because companies set conditions in which it is impossible for a manufacturer to make good money unless they inflate the cost of products. And this is not in favor of the consumer. Retail chains transfer money with delays, so the manufacturer must pay all expenses independently without making a profit.
  • It is difficult to find premises suitable for locating production. We have to invest in redevelopment, provision of water supply, electricity, and other communications.
  • The competition is serious, but it all depends on the location of the new workshop, the quality, range and cost of the goods presented on the shelves.

The advantages include the following indicators:

  • There is always a demand for dumplings. Even a family with average income often fills the freezer with semi-finished products in order to cook them at the right time.
  • Consumers choose quality. If competitors think only about profit, greatly inflate prices, add soy and flavorings, then it makes sense to compete with them in quality and reasonable price.
  • You can make money even on small batches and not spend money on expensive equipment. Use regular kitchen appliances, get your family to make dumplings by hand, or use a special dumpling mold.
  • There is a prospect for expansion if you open a dumpling shop or a small outlet to sell your products personally.

It is profitable to establish sales in rural areas, where the range of products is not always large. Even rural residents don’t always want to make homemade dumplings. Therefore, it makes sense to start your own business.

Eventually

Despite the large number of enterprises engaged in the production of semi-finished products, the demand for dumplings and dumplings will never disappear. There is no point in jumping into a large complex right away, but for a small business, such as a family business, it makes sense to start in the food industry. A good option might be a dumpling shop with the function of selling ready-made dishes, the so-called dumpling shop. The principle of registration and preparation for opening is approximately the same, but requires more investment. Although the profitability may be higher.

A catering business will never be unprofitable if the products offered are of good quality and taste good. There are many areas where housewives can show off their cooking skills, and one of them is making homemade dumplings. Semi-finished products sell well at any time of the year, which is explained by the wide range and minimal preparation time. This only means that when producing high-quality products, the entrepreneur is guaranteed a stable income.

Dumpling business at home: where to start?

Before opening a dumpling business, it would be a good idea to study competitors and offer the consumer something unique that others do not have. Analysis of prices, services and product quality will allow the entrepreneur not only to develop well, but also to significantly improve his dumpling business. Of course, for large manufacturers, a novice businessman is not a rival, but you can always find your niche and develop a client base. Moreover, the product will be truly tasty.

Today you won’t surprise anyone with classic dumplings, so you can play on the variety of products and the originality of the filling.

What documents are needed to open a dumpling shop at home?

First of all, to open a dumpling shop at home, you need to register a business.

Then, in addition to registration documents, you will need:

  • Conclusion of the SES

According to sanitary requirements, the minimum area for a dumpling shop is 50 m2. At the same time, it must be equipped with water, electricity, ventilation, sewerage and heating. The list of products and the technology for preparing semi-finished products are also certified by the SES.

  • Permission from the State Fire Supervision Authority

To obtain permission from firefighters, it is necessary to equip the workshop with a fire alarm and fire extinguishing means (fire extinguishers). If during the inspection the inspector finds violations, they should be corrected as soon as possible. The State Fire Supervision Service, like the SES, has every right to close an enterprise.

What equipment do you need to buy to open a dumpling shop at home?

Experience shows that it is better to start a business by hand-making dumplings, selecting the optimal technologies and recipes in the process. You can test the finished products on relatives and friends, using the recipe for semi-finished products that they liked the most.

When moving to a higher level of production, the entrepreneur will need to purchase equipment to automate processes:

  1. For processing meat - an electric knife, a meat grinder and a mince mixer.
  2. To prepare the dough - an apparatus for sifting flour, a dough mixer.
  3. Equipment for forming dumplings and other semi-finished products.
  4. A refrigerator (maybe more than one).
  5. Automatic packaging machine.

When packaging the finished product, it is better to use transparent bags. Semi-finished products in such packaging are sold out faster, since the buyer sees the appearance of the dumplings and can evaluate the quality of their sculpting. In general, the production of semi-finished products must comply with the requirements established at the legislative level.

Technology for preparing homemade handmade dumplings

No one will argue that every housewife uses her own signature recipe when preparing dough and minced dumplings. Therefore, even classic dumplings with the same set of ingredients turn out to be different in taste for everyone. If a novice entrepreneur is planning to produce homemade dumplings, then first it is advisable to understand what is required to produce tasty semi-finished products?

Not much is needed:

  • High quality raw materials.
  • Thoughtful technologies.
  • Original recipe.

When kneading the dough, you will need the highest quality flour. At first, you can experiment with the texture and thickness of the sheet.

In addition to pork, beef and chicken, you can add turkey, rabbit meat, vegetables, and fruits (for gourmets) to the minced meat. Try combining different types of meat and seasonings to find the optimal taste.

Eggs, salt, water and onions are also necessary ingredients in the production of dumplings.

Finished products are frozen to a temperature of -18°C and packaged for storage. Thick transparent bags are used as packaging; the optimal packaging weight is 0.5-1.0 kg.

Little secrets of the dumpling business:

  1. If you increase the water content in dough and minced meat up to 20%, then this technique will reduce the cost of dumplings. The quality and taste of the product will not change.
  2. If you add some potatoes to the meat , then the cost of semi-finished products will also decrease. These dumplings taste no worse than those made from pure meat, and their cost is the same.
  3. Meat loves onions and this property can be used. The dumplings will be more juicy if you put onions in the minced meat 2 times higher than normal. The more onions, the cheaper the meat costs.

The main thing in this business is to find the recipe that will attract customers.

Recruitment of personnel for the operation of a dumpling shop at home

At the initial stage of business development, you can involve your family and friends in making dumplings. When business takes off and you want to open a small workshop, you will have to hire 5-10 workers. Their main task will be to make dumplings. Taking into account the fact that with good organization of work, 100-200 kg of product can be produced per shift, loaders and a driver will not be superfluous. In addition, you will need a technologist, a sales manager, an accountant and a cleaner. The last two employees can work on an outsourcing basis.

Reference: According to the law, only those employees who have a health certificate are allowed to work with the food group of goods. Therefore, the entrepreneur must ensure that the books are renewed in a timely manner, otherwise the SES will issue a large fine.

Supplying dumplings at home: where to buy products for making dumplings?

In order for a dumpling shop to operate at home without fines or violations, products for the production of semi-finished products should be purchased from stores and farms. While the enterprise has not yet reached the industrial level, you can purchase meat at wholesale centers and large supermarkets.

Visiting bazaars where goods are sold by hand is not recommended . Sellers must have sanitary and permitting documents for all products.

When increasing the capacity of the enterprise, it is necessary to establish relationships with farmers and purchase meat in whole carcasses, which is much cheaper. In this case, there will be no problems with quality, since only fresh products come from farms.

Sales of ready-made dumplings: where is it profitable to sell handmade dumplings?

The first buyers, as a rule, are people from the immediate environment - friends, work colleagues, friends of friends, and so on. At this stage, the recipe is worked out, which is called “filling the hand.”

Receiving the first positive reviews and, accordingly, acquiring the first regular customers becomes a kind of signal for market expansion:

  • The best option for selling semi-finished products is local forums and social networks. There are enough people there to place an order for the popular dish.
  • The next step towards increasing sales volumes is an agreement with small cafes and restaurants. This promises the dumpling manufacturer constant orders for the supply of the product. At such food outlets, semi-finished products are the most popular.

There are other equally interesting sales options:

  1. Delivery of hot dumplings – lunches . Customers can be office employees, factory workers, market sellers.
  2. Sales of products in mini-shops and stalls . Their management is willing to cooperate if the dumplings from the new manufacturer have become famous and are selling well.

Advertising homemade dumplings: necessary or not?

Beginning entrepreneurs can do without advertising. At the start of a business, word of mouth is in full swing. And very successfully. People certainly talk about a good product, just like a bad one. Therefore, the quality of dumplings should always be unsurpassed.

Selling dumplings in retail outlets is another matter. Here you will need:

  • Original packaging with logo and name of the semi-finished product.
  • Launching an advertising campaign in the form of advertisements on forums, social networks and newspapers. Installing classic stretch marks will not help here.

It may be repeated that people always talk about a quality product. This means that buyers will leave positive reviews about delicious dumplings on various Internet resources. This is why advertising expenses should not be classified as low-budget. Advertising effectively increases sales.

How much does it cost to open a dumpling shop at home from scratch: a sample company business plan

The main expenses when opening a dumpling shop at home are:

1. Equipment purchase

You will need to purchase:

  • A freezer that can hold up to 100 kg costs 7,000-11,000 rubles.
  • Electric meat grinder – 1,500-5,900 rubles.
  • Dumpling maker (can be mechanical) - from 1,500 rubles.

Total: minimum 10,000 rubles

2. Consumables - raw materials

The food supply for approximately two months of work consists of:

  • Flour (first grade required) – 2,200 rubles.
  • Luka – 850 rubles.
  • Seasonings – 520 rubles.
  • Eggs – 110 rubles.
  • Various types of meat - 52,000 rubles.

Total: 55,680 rubles.

3. Employee salaries

Although many make do with their own (family) resources, hiring outsiders to produce requires financial costs, which are better taken into account right away. In extreme cases, they will cover unexpected expenses. This is approximately 35,000 rubles.

In total, the entrepreneur spends 100,680 rubles at the start, and if we take into account the fact that some equipment is already available, then the main financial burden falls solely on the purchase of consumable products.

In the future, it is necessary to provide for expenses on advertising events, rental premises and other expenses associated with the expansion of business activities. For now, this means production in the home kitchen.

Calculation of profitability of dumplings at home

  1. On average, the sales volume of beginning entrepreneurs is no more than 400 kg per month.
  2. The cost of 1 kg of the product in question is 70 rubles.
  3. Market prices for homemade dumplings vary from 120 rubles to 160 rubles or more.
  4. Income from the sale of one kilogram of product is 50-90 rubles.
  5. The sale of four hundred kilograms will bring a monthly profit of 28,000 rubles.

Even with such a modest turnover, the investment pays off in 3-4 months.

It is known that homemade food is always tastier and more attractive than store-bought semi-finished products. Buyers are happy to purchase homemade food, even if its price is higher than its industrial counterparts. You can produce dumplings in small batches at home, which will reduce the cost of equipment and renting premises.

How to start a dumpling production at home from scratch and what aspiring entrepreneurs need to know, says a guest of the magazine Reconomica from Riga, who has one and a half years of experience in the dumpling business.

My name is Svetlana. At the moment I live in Riga, I have been on maternity leave for three years now. I consider myself one of those restless mothers who fanatically clean, cook, bake every day, still manage to take care of the child and whine to her husband about the need for a gym membership. There is energy, but there is no strength to sit still.

On rainy or snowy days, I like to sit by the window and make dumplings and dumplings - this is my meditation.

The husband couldn’t handle everything himself and invited his colleagues for beer and dumplings. Here they are, connoisseurs! Colleagues said that they would be happy to buy these - an excellent solution for bachelors and men whose spouses consider modeling the most sophisticated torture or work to the point of exhaustion.

So my target audience has slowly formed.

First orders

At the beginning of the week they wrote me a list: who wants it, how much and with what filling. The difficulty was that a lot of minced meat had to be made from different meats. It's good that the order was made four days in advance. The first day was spent on preparations: dough and minced meat - then sculpting. Counting the ingredients and weighing them made the process very complicated and delayed; I wanted to accurately calculate the amount spent on a given volume of dumplings.

When everything is ready, sculpting is not a problem, but the problem is storage, there was no room for everyone. The first time we got out. The buyers were satisfied and the list of interested parties expanded.

After assessing the situation and drawing conclusions, I came to the conclusion that I can’t do without an electric meat grinder, a dough mixer, a large freezer, trays, and strong, good bags.

Start-up costs

We had to clearly calculate whether we would have enough customers to recoup the costs of additional equipment. It’s difficult to calculate here, I have 30 customers, they place an order once a week, but you can’t want dumplings all the time, so you need to look for new customers and somehow diversify your assortment.

On rainy or snowy days, I like to sit by the window and make dumplings and dumplings - this is my meditation.

It’s convenient that the Internet saves money, free advertising, especially since friends advise each other, and the circle is already expanding. But it’s still a risk, although any business is a risk. I doubted it, but, on the other hand, such kitchen equipment would not be superfluous.

We bought the following:

  • electric meat grinder for 3,000 rubles;
  • dough mixer for 20,000 rubles;
  • the freezer is in good condition, but used, cost 14,000 rubles;
  • 50 pieces of plastic trays – 5,000 rubles;
  • reliable convenient bags for packaging, designed for 1 kg of products - 3,400 rubles. for 1000 pieces.

Initial costs - 45,400 rubles.

You need to invest not only money, but also your soul

My husband went to the market to buy meat, onions, flour, and eggs. We all know that wholesale is cheaper. When purchasing, we always asked to see certificates and documents for the goods, which is very important in our case. Then they gave us discounts as regular customers.

In the first month, we spent 86,000 rubles on raw materials for dumplings. Taking into account the fact that all the products are of high quality, we relied on the taste, with a lot of meat filling and soft, unobtrusive dough.

First month of work

The husband actively participated not only in purchasing, he cleaned the meat as needed, cut it, and helped sculpt it. It took me 8 hours a day to sculpt 10 kg, my husband could help for an hour or two, sculpt, and in the first month it turned out to be 320 kg. Only 120 kg were sold to my husband’s colleagues, but advertising on the Internet bore fruit. The remaining dumplings were bought up by nearby areas, they took from 2 kg to 4 kg per person, and only one was surprised, he bought 20 kg at once.

Income in the first month amounted to 122,480 rubles. We had 8,900 rubles in the red. It’s very good for the first month, considering that we weren’t killing ourselves all day long, but making dumplings for me is no longer such a meditation.

The two of us could put on 20 kg on Saturday and free up the day for family fun. It’s hard to sculpt by hand, the back hurts a lot and gets tired, but from polling friends and acquaintances, they understood that this form is preferable.

Although I was interested in various electronic dumpling makers, the one that would suit me in size and other characteristics sculpted 12 kg in an hour, and I sculpt these 12 kg almost all day. But there is a huge drawback in such devices - you need to put dry minced meat there; if it is wet, there is a risk that it will not stick together well, but to find out, I had to buy it.

Experiment with color

I decided that I would compensate for the shape with color. I had a juicer (this saves money), I took carrots, beets and any greens that are currently cheaper and made juice. I immediately made half a liter of each juice, sometimes a liter, it is stored well and for a long time in the refrigerator, why not make it with a reserve, especially since washing the juicer is a rather dubious pleasure.

I decided that I would compensate for the shape of the dumplings with color.

Now the dumplings are also beautiful:

  • carrot juice gives a beautiful orange color (I tried adding turmeric to the dough to give it a rich orange color, the seasoning is not cheap and you need a lot for the desired color);
  • beet juice is very active and even a small amount gives a pink color, sometimes I replace it with red cabbage, but it happens that it gives spiciness to the dough and, in this case, you should not pepper the minced meat or pour a little juice for a pale pink color;
  • juice from greens, it doesn’t have to be fresh, even if the leaves darken a little and become sad, they can still be used, but yellow or rotting ones under no circumstances!!! You need a lot of greens for 500 g of juice; this bright green color costs a little more.

It will take a little more time, but by raising the price and increasing the interested public with beautiful dumplings, we get more.

Main quality

Many people want to spend little time and money and get a good profit, this can be done, but it will be either a one-time profit or a very unstable one.

I know that you can save on flour and use not the highest grade, gray and almost lost, a bag - for nothing. You can add cabbage, potatoes, bread, a lot of onions or crushed ice to the minced meat, but will it be tasty? And minced meat can be filled with spices, not meat, but soybeans and waste, but will your conscience allow it? Moreover, many busy parents give this to their children. Having tried these dumplings, at a price higher than ready-made ones from the supermarket, you can again return to store-bought ones.

When I make dumplings, I always try a few from different batches, with different fillings, and feed them to my family; I pay close attention to the taste and quality.

First tangible net profit

At the beginning of the second month, there was an uncovered investment of 8,900 rubles, plus the cost of raw materials in the amount of 95,000 rubles (more than in the previous month due to the purchase of spinach, salmon and cheese), plus the purchase of a machine for making dumplings - 2,500 rubles. I spent about 5,000 rubles experimenting with the machine, the minced meat was wet and all the products turned out to be substandard.

The income for the second month was 130,000 rubles, and the net profit was 18,600 rubles, that is, a plus from the second month - this is great.

A man who purchased 20 kg in the first month later bought 60 kg. He turned out to be the owner of a diner; his assortment was just short of dumplings. This client was pleased not only with large purchases, but also with the fact that it was not so important to him what shape the dumplings were. I freed up a lot of time, because for the cafe I prepared dumplings using a machine, and for juiciness I added ice to the minced meat, not instead of the minced meat, but to it. This trick allows the dumplings to form quickly and remain juicy during cooking.

For the cafe, I prepared dumplings using a machine.

The sales market was established: more than half were taken to cafes, the rest was bought up either by friends or on the Internet.

I experimented not only with color, but also with filling. We have such dumplings as:

  • dietary - with rabbit meat;
  • the most expensive - with cheese, salmon and spinach;
  • vegetarian - with cheese and spinach.

The more choice, the greater the demand. We sculpted within the range of 300-400 kg per month, the machine helped, but I didn’t give up hand sculpting either. Moreover, when the buyer sees beautiful multi-colored dumplings, but made from a machine, and ordinary white ones, but hand-made, in most cases, preference is given to the second option.

Difficulties of the dumpling business

The first difficulty was in the calculations. Prices for meat vary; each type must be clearly calculated both in order to have an idea of the costs and in order to set the price correctly.

Product price calculation

The cost of dumplings is from 240 rubles. and up to 360 rub. per kg, depending on the filling:

  • the cheapest - with pork,
  • with chicken and pork-beef (assorted) - a little more expensive,
  • just beef (really good, not old) - quite expensive,
  • from salmon - the most expensive.

Sometimes, instead of chicken, I take turkey, but only instead. Two such positions at the same time are not very profitable, although it is a dietary option. During the first six months, dumplings with pork were sold for 360 rubles. kg, the rest are more expensive.

The most expensive ones, with salmon, spinach, cheese, cost 540 rubles. per kg, but such orders are rare. Therefore, another difficulty is to predict what will be in demand. You can’t stick it on in advance, it’s better to order it.

Payment for orders

The starting capital is not that big, but still, you need to know and imagine how many people will be interested and buy dumplings. Even if almost the entire area won’t take them all the time, you definitely need backup options: a couple of cafes, shops. There must be a safety net.

The two of us could put on 20 kg on Saturday and free up the day for family fun.

It’s one thing when acquaintances and friends do not immediately pay for their order; roughly speaking, you can find them. But orders on the Internet are a risk, you need to accept full prepayment, or at cost, then you definitely can’t go wrong. People are different, they ordered it now, but three days later they either changed their minds, or there was no money, so it’s better to insure yourself here too.

The customer is always right

You definitely need to improve your technique, your recipe, and toppings. Human nature is such that we become bored with everything very quickly and want something new.

You should try to play with flavors, add seasonings, a little garlic, nutmeg gives the right notes. The main thing is that not only you try the updated versions of dumplings, but also friends or a group of people who can give an objective assessment.

If complaints arise from buyers, then under no circumstances should you be offended or try to sort things out. Constructive criticism helps you develop, and every buyer is dear - he will leave you, his friends and acquaintances may also refuse, you lose more. And figure out what’s wrong, and make a discount for the next order and put homemade sauce for the dissatisfied client’s dumplings.

Sanitary book

One of the prerequisites for success is a health certificate. Not everyone knows who you are and under what conditions you work. Your photo with a health book is an additional bonus.

And if you add several photographs of the work process to your portfolio so that the customer can see that you are a neat person working in a clean kitchen in a hat and gloves, then the chances of success are high. Moreover, the cost of gloves and caps is pennies, but the bonus and advertising are the key to profit.

Current state of affairs

At the moment, our business is only a year and a half old. We walk smoothly, slowly. Every month the profit is on average 30,000 rubles, sometimes even 40,000 rubles, but we started with 20,000 rubles. It’s a very good and profitable hobby for a girl on maternity leave.

We are expanding the range, while the machine is making dumplings, I am making dumplings. It happens that the filling remains, an excellent solution is puff pastries with different fillings, everyone loves them very much. Then what remains is the puff pastry - which is used for pizza; by the way, pizza made with puff pastry sells out the fastest. Such a varied menu can be designed.

The main thing is to try, try to surprise and never reduce the level of quality for the sake of easy money.

These are the beauties I make.

  • The very first thing you need to do is get a health record.

You can be confident in yourself, but in this case, the buyer needs to be confident in you. The presence of caps and gloves is more of a safety net for you, so that you know for sure that there will be nothing unnecessary in the dumplings.

  • Personal hygiene and cleanliness of the premises are the main thing.

When selling food, you are responsible for everyone, so be sure to try each batch yourself and involve your family and friends. You must clearly know that your products are tasty, high quality, and there can be no consequences.

  • Experiment with flavors.

If you introduce any new products, you must know for sure that they will be in demand. When I introduced dumplings with salmon, cheese and spinach, I was sure that, despite the price, they would be sold out first, but the price played a role, the taste was incomparable, but expensive. They are ordered rarely, several kg per month. It is not profitable to reduce the price, the ingredients are expensive. I won’t say that this is a miscalculation, but they are not as popular as the same dumplings with cheese and spinach or assorted (minced pork and beef). Just carefully evaluate the pros and cons before making Exotic melon and mango dumplings for sale. For most buyers, dumplings are a classic.

  • Assess your chances. Find out if there are competitors, their number.

I was lucky, in my area they didn’t make dumplings, they were in the neighboring ones, also not far away, but still. You definitely need to have an idea of where to sell your products; orders on the Internet are difficult to calculate at the initial stage. Feel free to visit small shops and cafes to find out if they are interested in such products, and if so, under what conditions. If at first the conditions seem unfavorable for you, this is not a reason to refuse. The main thing is that they buy from you, and good quality and taste will do the trick. It is necessary that as many people as possible learn about a worthy product.

  • It is better to make packages with a logo later.

It often happens that when buying dumplings in a store, it is impossible to really look at them because of the packaging. If you are confident in the appearance and quality of your product, then it is better to use transparent but durable bags. The buyer must see what he is paying for.

  • The main key to success is a properly selected and proven recipe.

All dumplings are prepared differently. I clearly understood that recipes with milk and kefir were not for me. When you make multi-colored dumplings, but you are not satisfied with the process of coloring with natural juice, you can choose food colors, but you must be sure that they are not harmful to health. Don't forget about responsibility!

Despite its prevalence, the production of dumplings at home as a business does not lose its relevance. There are several reasons, and they are all understandable: the dish is filling, quick to prepare and very tasty. Everyone loves dumplings, especially with sour cream, but not everyone has the patience to make them after a hard day or on the weekend.

Advantages of a home business

When engaging in this type of business, you don’t need to immediately dream of huge incomes. Every personal business, and not just making dumplings at home, goes through the following difficult stages:

  • search for start-up capital;
  • search for places of sale;
  • developing your own handwriting;
  • accumulation of financial reserves for further development.

And only when all the stages have been completed, if the owners remain true to their goals, the business begins to generate stable and even considerable income.

One of the significant advantages of producing dumplings at home is that the costs in the first stages will be limited to several thousand. This, in turn, allows you to save significantly at the stage of developing your business.

The main thing is to find the very recipe that potential customers will really like, and when you start making a delicious dish, even with a strong desire, do not skimp on ingredients.

After all, what is the reason that, seeing a huge amount of factory-made products on the shelves, buyers are looking for analogues made at home? Large manufacturers, undergoing enormous competition, spend a large amount of money on advertising, colorful packaging, are forced to purchase advanced equipment and maintain a staff of people involved in more than just sculpting.

And, as always, the costs are compensated either by a very high price, unjustified from the point of view of the average person, or by the quality of the product: reducing the volume of minced meat, the amount of meat, the use of soy and other little tricks. The result is the absence of a base of regular customers: only casual buyers purchase a product that lacks in taste.

How to start a dumpling business from scratch

To create your own business, you don’t have to work yourself: you can involve your household members in the business. Wife, children, and other family members dreaming of the delights of home-based earnings and improving their financial condition will happily get to work as soon as they understand its promise.

What do you need to purchase to start a dumpling business from scratch? First of all, products, because other components necessary for kneading, rolling and storage are already in every home.

Initially, it is necessary to clarify a few points:

At first, when trying to attract buyers, you should not inflate the price too much: a premium of 15–20% is enough. Over time, when the situation gets stronger, prices can be raised by about 50%.

Search for sales locations

When the first tests for finding a recipe have been passed, in other words, the recipes have been tried and the most delicious ones have been selected by the family council during the tasting process, you can start looking for places where your dumplings can be sold. Of course, you need to take your own performance into account here.

You can sell homemade dumplings as a product of your own business in the form of semi-finished products, which can be accepted for sale at various retail outlets located not far from home:

  • factory canteen, plant, office;
  • grocery kiosk;
  • in a small station cafe;
  • large store.

Organizing your own mini-workshop will require:

  • hiring people who will need to be paid monthly;
  • development of branded packaging and its order;
  • renting premises of suitable size;
  • Availability of a vehicle for product delivery.

The costs are huge. The only consolation is that dumplings, like bread, belong to products that do not have a seasonal focus. Everyone consumes them all the time.

When looking for people for your own mini-workshop, it is preferable to choose those who have already worked in this area and know how and love to handle products. If a small production is equipped with the necessary automation, and its productivity is from 80 to 200 kg, then for uninterrupted operation it is enough to ensure the presence of five people. It is much more profitable to work with family members, continuing to develop the business with them.

Profit will only be maximum when all participants in the home-based business are aimed at success. And it doesn’t matter whether the business has grown or remains at the level of a home enterprise: the main thing is to feel financial independence and be able to realize self-realization.
