It was disturbing that a tent with coffee was already working nearby. But Ruslan opened his establishment in a different format, so he decided to take a chance - to make a coffee house better than that of competitors and lure their visitors to him. The place was approved.

The landlord was good. He not only did not ask for a deposit and an advance payment, but also gave a 20-day delay. As a result, Ruslan paid 30 thousand rubles for a month of rent. Every month, utility bills are added to this amount, it comes out to about 40 thousand.


Repair

On this joy from the premises ended - his condition was terrible. The walls were sheathed with plasterboard and covered with wallpaper 15 years ago, the electrics and plumbing worked somehow. A major overhaul was needed.


Ruslan spent 360,000 rubles on repairs and all 20 days of the lease deferment. It would have turned out more, but experience in construction helped. Ruslan did everything himself - demolished and rebuilt the walls, installed new doors, replaced the electrics and plumbing.


Even despite the savings, the preparation of the premises almost doubled Ruslan's budget. There was not enough money, I had to borrow from friends.

Friends helped, but the problems did not end there. Ruslan spent 150 thousand rubles on furniture. I ordered a bar counter from local craftsmen, but they did not complete the order on time. The opening day had already been appointed, and Ruslan was afraid that he would not make it in time. Therefore, the installation of the rack was taken up as soon as it was brought.


The sign was also installed at the last moment - three days before the opening.


Despite the fact that he had to work very quickly, Ruslan tried to do everything efficiently. At Take and Wake's headquarters, a design project was developed for him. Ruslan did everything possible so that his establishment did not differ in any way from the picture.


Equipment and consumables

When the problems with the repair and arrangement of furniture were resolved, it was time to buy equipment and supplies. On the recommendation of the main office, Ruslan purchased a Carboma freezer, a refrigerator, a toaster and a grill. I spent 60 thousand rubles on everything.

Ruslan rented a Simonelli coffee machine and a Fiorenzato coffee grinder from the main office for free. Its essence is that if you buy coffee and other consumables from the franchisor's suppliers, then the equipment is just given. And if you want to work with other dealers, the equipment will have to be returned or redeemed.


The suppliers of Take and Wake arranged for Ruslan, but the coffee machine did not. More precisely, not immediately. At first he was greedy and took a two-group, but it turned out that it was too big and would not fit on the counter. I had to go back to Moscow and change the coffee machine to a one-group one.

Ruslan also brought consumables from the Moscow office. I spent 60 thousand rubles on coffee, milk, syrups, cups, pitchers, holders and other trifles.


Staff

To save time, Ruslan started looking for employees for the coffee shop even before the renovation was completed. 30 people responded to a vacancy for a barista with a schedule of 2/2 and a salary of 25 thousand rubles in three days. Ruslan chose two and signed them up for training. Instructions for recruiting and motivating staff were given at Take and Wake's main office.

As a rule, employees are trained there - in their own barista school. But a specialist from the main office, Denis Kuzminykh, came to Ruslan's point on his own. For three days, he taught future baristas how to make delicious coffee and shared signature recipes. As a result of the training, the guys received certificates.


In addition to following the franchisor's recommendations, Ruslan took the initiative. A friend who does social media marketing suggested that he create an Instagram account for the coffee shop so that people would know about it even before it opens. So Ruslan did. Every day I posted news and photo reports there, wrote about problems, boasted of achievements. Instagrammers liked this initiative. In a year, almost 3,000 people subscribed to Ruslan's coffee shop account.

Clients

Ruslan believes that the main secret of success is to know your customers. Even before the opening, specialists from Take and Wake's main office helped him analyze the city, understand with whom and how best to work.

Ruslan decided to work with everyone. If, in general, a typical visitor in the network is a student, a young man under 35, then Ruslan often gathers women over 40, employees of the nearest business center, and managers. Expectations and reality

Comparing the expectations of buying a franchise with the reality of launching a coffee shop, Ruslan says that things didn't work out as planned. He expected to meet 400 thousand rubles, but spent 700 thousand.

Everything was clear on the franchisor's side, he was helped to resolve issues, gave instructions, but still some unplanned difficulties and expenses constantly arose. The repair of the premises alone exceeded Ruslan's budget twice.

Profit also had to wait longer than we would like. The coffee house reached the payback in two months, and the investments were completely repulsed only after seven. He thought it would be faster. For himself, Ruslan explained the extended terms by the fact that the institution opened in the winter.
